IMO, it's not a very good idea to pack your car that full - I know my dad would be very unimpressed. In fact, he'd probably take everything out and re-pack it in a super-condensed Dad fashion. But I'm not sure it's actually illegal. As has been pointed out, some vans don't have any view out the back, but you do have to be extra careful and have to take responsibility for ensuring that you work around it.
